Malted rice is made in Ishikawa called "Gohyaku Mangoku" and its polishing ratio is 50%. Kake rice is also Gohyaku Mangoku and its polishing ratio is 58%.
It is characterized by a gentle scent with a natural aroma, deep flavor, and balanced taste. Liquor reminiscent of the soft full moon. It is a typical pure rice Ginjo sake made in Kaga, Ishikawa.
*"Kake rice" means rice which gets cool and put directly into Moromi, fermented beans, after steaming. It was selected as the beverage for Novel Night Cap, after party of Nobel Prize Official Banquet and novel prize winners and its related people tried this sake at that time.
